Our soil is quite poor and plants seem to take ages putting down a good root system, what can I do to help them?

Apart from improving the soil as much as possible by incorporating well-rotted organic matter into the whole area, you can also use Bone Meal. This is an excellent source of slow release phosphorus, which is used by plants to promote strong and healthy root growth. It also contains nitrogen, a vital plant nutrient and calcium another essential element for plant growth. When you plant any new plants in your soil, but especially trees and shrubs that require an extensive root system to support them, incorporate Bone Meal into the planting hole as an extra tonic for the roots. Existing plants can also be supported by gently working Bone Meal into the soil close to their root ball. Take care not to damage the roots and then mulch over the top when the ground is wet to insulate the roots from extreme heat and cold.
