Maple Roast Parsnips

A great addition to any Christmas dinner or Sunday roast!

Honey is generally a bit too sweet and can mask the flavour of home-grown parsnips. By contrast, maple syrup gives them a gently caramelised richness!

Serves 6 people

Ingredients

  • 1.5kg of parsnips (3.3lb)
  • 2tbsp maple syrup (the best quality you can afford)
  • 2tbsp vegetable oil
  • Sea Salt and Black Pepper

Step One

Preheat the oven to 220C (200C Fan, or gas mark 7).

Chop up the parsnips into even sized chunks and put into an oven proof dish

Step Two 

Put the maple syrup and vegetable oil in the dish, season with salt and pepper and mix thoroughly.

Roast for 30-40mins until crunchy on the outside and fluffy in the middle.
