Brussels Sprouts and Fried Eggs

A great remedy for a festive induced hangover!

Yes, it’s fried, but this tasty mix of eggs, brussels sprouts and fresh tomatoes is positively brimming with goodness. Extra brownie points for growing the brussels sprouts yourself!

Serves 2

Ingredients:

  • 4 large free-range eggs
  • A large handful of cooked brussels sprouts
  • A large handful of cherry tomatoes
  • Salt and pepper
  • Olive oil

Step 1

Grab a frying pan and splash in some olive oil. Place over a moderate heat.

Cut the cooked brussels sprouts and the un-cooked cherry tomatoes in half.

Step 2

Crack the eggs into the frying pan one at a time.

Allow the whites of the egg to form a solid shape and then throw in the brussels sprouts and cherry tomatoes.

Step 3

Once the yolks are almost set, the eggs are cooked.

Arrange on 2 plates, season with salt and pepper and tuck in!
